Sunday Dinner - 10/17/2010

With so much going on this weekend, I didn't have the energy to decide what to cook. So I went with a quick and easy dish. Turkey Nachos! Everyone loves nachos. But the are unhealthy and fattening. But with a few easy substitutions nachos become a healthy and nutritious. With the black bean & corn salsa, you can add more veg. I promise, you don't notice that the sour cream is fat free or the cheese is low fat.


Black Bean & Corn Salsa
Ingredients
1 can black beans, drained
1 can corn, drained
1 can rotel, drained
1 onion, chopped
1 tbsp garlic, minced
1/4 cup lime juice
1/2 cup cilantro, chopped
2 tbsp olive oil

Directions
In a medium size bowl, combine all ingredients. Stir well. Allow the flavors to mix for an hour before serving.


Turkey Nachos

Ingredients

1lb ground turkey
1 onion
1 bell pepper
1 tbsp taco seasoning
baked lays
1/2 shredded low-fat cheese
1/4 cup low-fat sour cream
black bean & corn salsa

Directions
Slices the bell pepper and onions thinly. Brown in a pan until the veg get a little color. Brown the meat in a separate plan.

Layer the chips, meat, veg, and salsa.


Sprinkle with cheese and add sour cream.


Healthy nachos? Yep. Tasty tasty.

Sunday Dinner - 08/01/2010

Sometimes when I go to cook dinner I have no idea what I'm going to make. It's a little game I call "What's in My Kitchen". The game goes like this...I find a food to give me inspiration, a meat or pasta or rice. Then I make a recipe I know by heart. Or I just grab random food stuffs and start cooking. This fails as often as it works out. Whatever dinner turns out to be is usually edible but not always awesome. Tonight, I let the ground turkey in my freezer and the beans in my pantry to give me inspiration. So turkey chili it is!


Crock Pot Turkey Chili
Ingredients
1.5lb ground turkey breast
1 small onion, chopped
1 small bell pepper, chopped
2 cans diced tomatoes
2 small cans tomato sauce
1 cans tomatoes w/ chili (rotel)
1can chickpeas, undrained
2can red beans, undrained
2 tbsp chili powder
2 dashes of jalapeno hot sauce

Directions
Brown turkey, bell pepper, and onion in a medium skillet over med-high heat until cooked through.


Drain fat  from turkey mixture and transfer to crock pot. Add the beans, rotel, chickpeas, tomatoes, tomato sauce, hot sauce and chili powder mixing well.



Cook on high 4-6hrs or low for 6-8hrs. Serve with a little cheese and a few baked tortilla chips.

Sunday Dinner - 04/25/10

Growing up, I never understood why people didn't like meatloaf. My mom is an amazing cook. Her meatloaf is like an Italian meatball. It's moist and flavorful. I've tried to get the recipe but she's one of those "You put a little of this and a little that" cooks. I've never successfully mimicked her recipe, unfortunately. Below is a recipe is nearly as good.

Meatloaf with Red Sauce
Ingredients
Loaf
1lbs lean ground beef
1lbs lean ground turkey
2 eggs
1tsp Worcestershire
Salt, to taste
hot sauce, to taste
1cup onion, chopped
1/2cup bell pepper, chopped
2tbsp parsley
1tbsp garlic, minced

Red Sauce:
2cups tomatoes, crushed
1/4cup dry white wine
1tbsp Worcestershire

Directions
Preheat oven to 350deg. In a small bowl, beat eggs with the Worcestershire, salt, and hot sauce.

Add egg mixture to the ground turkey and beef. Mix well. Add the onion, bell pepper, parsley and garlic to the meat mixture. 

Mix well. Form the meat into a loaf and place in a large roast pan.


Blend the tomatoes, Worcestershire, and white wine in a bowl.
 
Pour the sauce over and around the meat loaf and bake for1hr. Slice and serve with the red gravy on top.

While, I'm still refining my recipe. It is tasty. Tonight, we had over meatloaf with smashed potatoes,  fruit salad, and broccoli. I love how many serving of fruits & veg I snuck into this meal.
